Every spring we await word from Brad Donnay that the kids (baby goats) are healthy and ready to join the herd. This news is exciting because it means we’ll soon see our favorite fresh, organic, local Chevre back in the shop. Donnay takes a cheesemaking hiatus during the goats’ infancy and weens the kids slowly, allowing them to nurse much longer than most dairy farmers. Giving the herd a healthier, happier start to life makes for a truly excellent , farmstead product absolutely worth the wait. We love the classic pairing of Chevre with Loire Valley Sauvignon Blanc; Pierre Prieur Sancerre is a favorite.
